Mexican-Inspired Chicken Tortilla Soup

Spicy Sriracha Deviled Chicken



Ingredients:


  • 2 cups cooked shredded chicken (rotisserie chicken works great)

  • 1/4 cup mayonnaise (adjust for desired creaminess)

  • 1-2 tablespoons Sriracha sauce (adjust for spice level)

  • 1 teaspoon lime juice (freshly squeezed)

  • 1/2 teaspoon garlic powder

  • 2 green onions, finely chopped (for garnish)

  • 1/2 teaspoon paprika (for garnish)

  • Optional: Halved bell peppers, crackers, or lettuce cups for serving


Instructions:


  1. Prepare the Chicken:

    • If you don’t have pre-cooked shredded chicken, boil or bake 2 chicken breasts, then shred them using two forks.


  2. Make the Filling:

    • In a mixing bowl, combine the shredded chicken, mayonnaise, Sriracha sauce, lime juice, and garlic powder.

    • Mix well until the chicken is evenly coated and the mixture is creamy. Adjust the Sriracha and mayonnaise to your taste.


  3. Assemble:


    • Option 1: Fill halved bell peppers with the chicken mixture for a low-carb option.


    • Option 2: Serve the mixture on crackers or toasted bread slices.


    • Option 3: Spoon the mixture into lettuce cups for a light and refreshing appetizer.


  4. Garnish:

    • Sprinkle the top with finely chopped green onions and a dusting of paprika for added flavor and color.


  5. Serve:

    • Serve immediately as an appetizer, snack, or light meal. Pair with extra Sriracha or lime wedges on the side for those who want an extra kick.
