Shamrock Shake Cheesecake
A festive, minty, and creamy cheesecake inspired by the classic Shamrock Shake! This no-bake cheesecake is perfect for St. Patrick’s Day or anytime you crave a delicious minty dessert.
Ingredients
For the Crust:
- 2 cups (200g) graham cracker crumbs (or crushed Oreos)
- ¼ cup (50g) granulated sugar
- ½ cup (113g) unsalted butter, melted
For the Cheesecake Filling:
- 16 oz (454g) cream cheese, softened
- 1 cup (120g) powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon peppermint extract
- 1 ½ cups (360ml) heavy whipping cream, cold
- 3–4 drops green food coloring (adjust for desired shade)
For the Topping:
- 1 cup (240ml) heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
- Whipped cream (for garnish)
- Green sprinkles or crushed mint candies (optional)
- Maraschino cherries (optional)
Instructions
Make the Crust:
- In a medium bowl, mix graham cracker crumbs (or crushed Oreos), sugar, and melted butter until combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan.
- Place in the refrigerator to chill while making the filling.
Make the Cheesecake Filling:
- In a large bowl, beat cream cheese until smooth and creamy.
- Add powdered sugar, vanilla extract, and peppermint extract. Mix until fully combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Add green food coloring and mix until the color is evenly distributed.
- Pour the cheesecake filling over the chilled crust and smooth the top with a spatula.
- Cover and refrigerate for at least 4 hours (or overnight) to set.
Make the Whipped Topping:
- In a bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Pipe or spread whipped cream over the chilled cheesecake.
Decorate & Serve:
- Garnish with green sprinkles, crushed mint candies, or maraschino cherries.
- Slice and enjoy your creamy, minty Shamrock Shake Cheesecake!
Tips & Variations:
- For a stronger mint flavor, add an extra ½ teaspoon of peppermint extract.
- Swap graham crackers for chocolate cookies for a richer taste.
- Make mini cheesecakes by using a muffin tin with liners.
- If you prefer a baked version, bake the crust at 350°F (175°C) for 10 minutes before adding the filling.
