Mediterranean Chickpea Salad




Ingredients


  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ½ red onion, finely chopped

  • ½ cup Kalamata olives, sliced

  • ½ cup crumbled feta cheese

  • ¼ cup fresh parsley, chopped

  • 3 tablespoons olive oil

  • 2 tablespoons red wine vinegar

  • 1 teaspoon dried oregano

  • 1 clove garlic, minced

  • ½ teaspoon salt (or to taste)

  • ¼ teaspoon black pepper


Instructions


  1. Prepare the Vegetables:

    • Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and slice the Kalamata olives.


  2. Make the Dressing:

    • In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.


  3. Assemble the Salad:

    • In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.

    • Pour the dressing over the salad and toss gently to combine.


  4. Garnish and Serve:

    • Sprinkle fresh parsley on top for a burst of flavor.

    • Serve immediately or chill in the fridge for 30 minutes to let the flavors meld.
