Mediterranean Chickpea Salad
Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, diced
1 cup cherry tomatoes, halved
½ red onion, finely chopped
½ cup Kalamata olives, sliced
½ cup crumbled feta cheese
¼ cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
1 clove garlic, minced
½ teaspoon salt (or to taste)
¼ teaspoon black pepper
Instructions
Prepare the Vegetables:
Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and slice the Kalamata olives.
Make the Dressing:
In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, dried oregano, salt, and pepper.
Assemble the Salad:
In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, Kalamata olives, and crumbled feta cheese.
Pour the dressing over the salad and toss gently to combine.
Garnish and Serve:
Sprinkle fresh parsley on top for a burst of flavor.
Serve immediately or chill in the fridge for 30 minutes to let the flavors meld.
