Leprechaun Fudge

This easy, creamy, and festive green fudge is perfect for St. Patrick’s Day! With a smooth white chocolate base and a hint of mint, it’s a magical treat that even a leprechaun would love. 


Ingredients

  • 3 cups (525g) white chocolate chips
  • 1 can (14 oz / 397g) sweetened condensed milk
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract (optional, for a minty flavor)
  • Green food coloring (adjust for desired shade)
  • ½ teaspoon salt
  • Green sprinkles, gold sprinkles, or edible glitter (for decoration)

Instructions

1. Melt the Fudge Base

  1. Line an 8x8-inch pan with parchment paper for easy removal.
  2. In a medium saucepan, melt white chocolate chips, sweetened condensed milk, and butter over low heat, stirring continuously until smooth.
  3. Remove from heat and stir in vanilla extract, peppermint extract (if using), salt, and green food coloring until fully combined.

2. Set & Decorate

  1. Pour the fudge mixture into the prepared pan and smooth the top with a spatula.
  2. Immediately sprinkle with green sprinkles, gold sprinkles, or edible glitter for a festive touch.
  3. Refrigerate for at least 3 hours (or until firm)

3. Slice & Serve

  1. Once set, lift the fudge out of the pan using the parchment paper.
  2. Cut into small squares and serve.

Tips & Variations

  • Make it boozy! Stir in 1 tablespoon of Irish cream liqueur for an adult twist.
  • Swirl effect: Drop in a few extra drops of dark green food coloring and swirl with a toothpick for a marbled look.
