Irish Whiskey Glazed Chicken
This flavorful and slightly sweet whiskey-glazed chicken is perfect for St. Patrick’s Day! The combination of Irish whiskey, brown sugar, and mustard creates a rich and sticky glaze that pairs beautifully with chicken drumsticks or thighs.
Ingredients:
For the Chicken:
- 6 chicken drumsticks (or thighs)
- 1 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
For the Irish Whiskey Glaze:
- ½ cup Irish whiskey (such as Jameson)
- ¼ cup brown sugar
- 2 tbsp Dijon mustard
- 2 tbsp honey (or maple syrup)
- 1 tbsp Worcestershire sauce
- 2 cloves garlic, minced
- ½ tsp red pepper flakes (optional, for heat)
- 1 tbsp butter
Instructions:
Step 1: Prepare the Chicken
- Preheat Oven to 400°F (200°C).
- Season the Chicken: Pat the chicken dry and season with salt, pepper, and garlic powder.
- Sear (Optional but Recommended): Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until golden brown. Remove from heat.
Step 2: Make the Whiskey Glaze
- In a small saucepan, combine Irish whiskey, brown sugar, mustard, honey, Worcestershire sauce, garlic, and red pepper flakes.
- Simmer for 5–7 minutes over medium heat, stirring often, until it thickens slightly. Stir in the butter for a glossy finish.
Step 3: Bake the Chicken
- Brush the chicken generously with the whiskey glaze.
- Bake for 25–30 minutes, basting with more glaze every 10 minutes. The internal temperature should reach 165°F (75°C).
Step 4: Serve & Enjoy!
