Irish Whiskey Glazed Chicken

This flavorful and slightly sweet whiskey-glazed chicken is perfect for St. Patrick’s Day! The combination of Irish whiskey, brown sugar, and mustard creates a rich and sticky glaze that pairs beautifully with chicken drumsticks or thighs.



Ingredients:

For the Chicken:

  • 6 chicken drumsticks (or thighs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

For the Irish Whiskey Glaze:

  • ½ cup Irish whiskey (such as Jameson)
  • ¼ cup brown sugar
  • 2 tbsp Dijon mustard
  • 2 tbsp honey (or maple syrup)
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tbsp butter

Instructions:

Step 1: Prepare the Chicken

  1. Preheat Oven to 400°F (200°C).
  2. Season the Chicken: Pat the chicken dry and season with salt, pepper, and garlic powder.
  3. Sear (Optional but Recommended): Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 2–3 minutes per side until golden brown. Remove from heat.

Step 2: Make the Whiskey Glaze

  1. In a small saucepan, combine Irish whiskey, brown sugar, mustard, honey, Worcestershire sauce, garlic, and red pepper flakes.
  2. Simmer for 5–7 minutes over medium heat, stirring often, until it thickens slightly. Stir in the butter for a glossy finish.

Step 3: Bake the Chicken

  1. Brush the chicken generously with the whiskey glaze.
  2. Bake for 25–30 minutes, basting with more glaze every 10 minutes. The internal temperature should reach 165°F (75°C).

Step 4: Serve & Enjoy!
