This Irish Soda Bread Pudding is a warm, comforting dessert that gives a festive twist to a classic. The dense, slightly sweet soda bread soaks up a rich custard, creating a deliciously soft and flavorful pudding. Perfect for St. Patrick’s Day
Ingredients:
For the Bread Pudding:
- 6 cups day-old Irish soda bread, cubed (or any dense bread)
- 2 cups heavy cream
- 1 cup whole milk
- ¾ cup granulated sugar
- 3 large eggs
- 1 tbsp vanilla extract
- ½ tsp ground cinnamon
- ¼ tsp salt
- ½ cup raisins or currants (optional)
- 2 tbsp Irish whiskey (optional, for extra flavor)
- 2 tbsp unsalted butter, melted
For the Vanilla Sauce:
- ½ cup unsalted butter
- ½ cup granulated sugar
- ½ cup heavy cream
- 1 tsp vanilla extract
- 1 tbsp Irish whiskey (optional)
Instructions:
Step 1: Prep the Bread
- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish.
- If your Irish soda bread is fresh, cut it into cubes and toast them lightly in the oven for 5-7 minutes until slightly dry.
Step 2: Make the Custard
- In a large bowl, whisk together the heavy cream, milk, sugar, eggs, vanilla extract, cinnamon, and salt until smooth.
- If using, soak the raisins/currants in Irish whiskey for 10 minutes, then add them to the custard mixture.
Step 3: Assemble the Bread Pudding
- Add the cubed soda bread to the custard mixture, tossing gently to coat. Let it soak for 15 minutes so the bread absorbs the custard.
- Pour the mixture into the greased baking dish and drizzle with melted butter.
Step 4: Bake
- Bake for 40-45 minutes, or until golden brown and a knife inserted in the center comes out clean.
Step 5: Make the Vanilla Sauce
- In a small saucepan over medium heat, melt butter and stir in sugar and heavy cream.
- Bring to a gentle simmer, stirring constantly, for 3-5 minutes until slightly thickened.
- Remove from heat and stir in vanilla extract (and whiskey, if using).
Step 6: Serve & Enjoy!
- Drizzle the warm vanilla sauce over the bread pudding before serving. Enjoy warm with a scoop of ice cream or whipped cream
