Irish Beef and Stout Pie
A hearty pie with tender beef, mushrooms, and a rich stout gravy.
Ingredients:
1.5 lbs beef stew meat
2 tbsp olive oil
1 onion, chopped
2 carrots, chopped
8 oz mushrooms, sliced
1 cup stout beer (like Guinness)
2 cups beef broth
2 tbsp flour
1 tsp rosemary
1 sheet puff pastry
1 egg (for egg wash)
Instructions:
Brown beef in olive oil, then remove from the skillet.
Sauté onions, carrots, and mushrooms until softened.
Stir in flour, then add stout and beef broth. Bring to a simmer.
Return beef to the skillet, add rosemary, and cook until thickened.
Transfer to a baking dish, top with puff pastry, and brush with egg wash.
Bake at 375°F (190°C) for 30 minutes until the pastry is golden.
