 Irish Beef and Stout Pie

A hearty pie with tender beef, mushrooms, and a rich stout gravy.




Ingredients:


  • 1.5 lbs beef stew meat

  • 2 tbsp olive oil

  • 1 onion, chopped

  • 2 carrots, chopped

  • 8 oz mushrooms, sliced

  • 1 cup stout beer (like Guinness)

  • 2 cups beef broth

  • 2 tbsp flour

  • 1 tsp rosemary

  • 1 sheet puff pastry

  • 1 egg (for egg wash)


Instructions:


  1. Brown beef in olive oil, then remove from the skillet.

  2. Sauté onions, carrots, and mushrooms until softened.

  3. Stir in flour, then add stout and beef broth. Bring to a simmer.

  4. Return beef to the skillet, add rosemary, and cook until thickened.

  5. Transfer to a baking dish, top with puff pastry, and brush with egg wash.

  6. Bake at 375°F (190°C) for 30 minutes until the pastry is golden.
