Irish Beef and Potato Pie

A comforting pie filled with beef, potatoes, and savory gravy.




Ingredients:


  • 1 lb ground beef

  • 1 onion, diced

  • 2 carrots, diced

  • 2 potatoes, peeled and diced

  • 1 cup peas

  • 2 cups beef broth

  • 2 tbsp flour

  • 1 tsp thyme

  • 1 sheet puff pastry or pie crust

  • 1 egg (for egg wash)


Instructions:


  1. Brown ground beef in a skillet, then add onions, carrots, and potatoes. Cook until softened.

  2. Sprinkle flour over the mixture and stir to combine.

  3. Add beef broth and thyme, simmering until thickened. Stir in peas.

  4. Transfer the mixture to a pie dish and top with puff pastry or pie crust.

  5. Brush with egg wash and bake at 400°F (200°C) for 25-30 minutes until golden brown.
