Irish Beef and Guinness Stew
A classic St. Patrick's Day dish, this stew is rich, hearty, and full of flavor.
Ingredients:
2 lbs beef chuck, cubed
2 tbsp olive oil
2 onions, chopped
3 carrots, sliced
3 celery stalks, sliced
3 garlic cloves, minced
2 tbsp tomato paste
1 bottle Guinness stout
4 cups beef broth
2 tbsp flour
2 bay leaves
1 tsp thyme
Salt and pepper to taste
Chopped parsley for garnish
Instructions:
Season beef with salt and pepper, then brown in olive oil in a large pot. Remove and set aside.
Sauté onions, carrots, and celery until softened. Add garlic and tomato paste, cooking for 2 minutes.
Sprinkle flour over the vegetables, stirring to combine.
Pour in Guinness and beef broth, scraping the bottom of the pot.
Return beef to the pot, add bay leaves and thyme, and simmer for 2-3 hours until tender.
Garnish with parsley and serve with mashed potatoes or crusty bread.
