Herb-Crusted Chicken with Green Pea Puree
This vibrant and flavorful dish features perfectly baked herb-crusted chicken paired with a creamy green pea puree. It’s a fresh and light meal, ideal for St. Patrick’s Day
Ingredients:
For the Herb-Crusted Chicken:
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup breadcrumbs (preferably panko for extra crunch)
- 2 tbsp grated Parmesan cheese (optional for extra richness)
For the Green Pea Puree:
- 2 cups frozen peas (or fresh peas, if preferred)
- 1 tbsp butter
- 1 clove garlic, minced
- ¼ cup vegetable or chicken broth
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp lemon juice (optional, for a fresh finish)
Instructions:
Step 1: Prepare the Herb-Crusted Chicken
- Preheat Oven to 400°F (200°C).
- Mix the Herb Crust: In a small bowl, combine dried thyme, rosemary, garlic powder, salt, pepper, breadcrumbs, and Parmesan cheese (if using).
- Coat the Chicken: Rub the chicken breasts with olive oil. Press the herb mixture evenly onto both sides of each chicken breast.
- Bake the Chicken: Place the chicken on a baking sheet lined with parchment paper. Bake for 20–25 minutes, or until the chicken is cooked through (internal temperature of 165°F/75°C) and the crust is golden and crispy.
Step 2: Make the Green Pea Puree
- Cook the Peas: In a small pot, bring water to a boil and add the peas. Cook for 2–3 minutes until tender. Drain the peas and set aside.
- Sauté Garlic: In the same pot, melt butter over medium heat and sauté the garlic for 1 minute until fragrant.
- Puree the Peas: Add the cooked peas to the pot along with the broth, salt, and pepper. Use an immersion blender (or transfer to a regular blender) to puree the mixture until smooth and creamy. If you want a smoother texture, add more broth until it reaches your desired consistency.
- Finish the Puree: Stir in lemon juice for a fresh, zesty flavor (optional).
Step 3: Serve & Enjoy!
