Guinness Glazed Pork Chops

A flavorful and juicy pork chop dish with a rich Guinness glaze—perfect for St. Patrick's Day


Ingredients:

For the Pork Chops:

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

For the Guinness Glaze:

  • 1 cup Guinness Stout (or other dark beer)
  • ¼ cup brown sugar
  • 2 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 2 cloves garlic, minced
  • 1 tbsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp black pepper

Instructions:

Step 1: Prepare the Glaze

  1. In a small saucepan, combine Guinness beer, brown sugar, Dijon mustard, Worcestershire sauce, garlic, apple cider vinegar, salt, and pepper.
  2. Bring to a simmer over medium heat, stirring occasionally.
  3. Cook for 10–15 minutes until the sauce thickens into a glaze. Remove from heat and set aside.

Step 2: Cook the Pork Chops

  1. Pat pork chops dry with a paper towel and season with salt and black pepper.
  2. Heat olive oil in a large skillet or grill pan over medium-high heat.
  3. Sear the pork chops for 3–4 minutes per side, or until golden brown.
  4. Brush the chops with Guinness glaze and continue cooking for another 1–2 minutes per side, basting with more glaze.
  5. Cook until the internal temperature reaches 145°F (63°C).

Step 3: Serve & Enjoy

  1. Remove from heat and let the pork chops rest for 5 minutes before serving.
  2. Drizzle extra Guinness glaze on top.
  3. Serve with colcannon (mashed potatoes with cabbage) or roasted vegetables.
