Guinness Chocolate Cupcakes with Irish Cream Frosting
These rich, moist chocolate cupcakes are infused with Guinness stout and topped with a luscious Irish cream frosting. A perfect St. Patrick’s Day treat
Ingredients:
For the Cupcakes:
- 1 cup (240ml) Guinness stout
- ½ cup (115g) unsalted butter, cubed
- ¾ cup (75g) unsweetened cocoa powder
- 2 cups (250g) all-purpose flour
- 2 cups (400g) granulated sugar
- 1½ tsp baking soda
- ½ tsp salt
- 2 large eggs
- ⅔ cup (160g) sour cream
- 1 tsp vanilla extract
For the Irish Cream Frosting:
- 1 cup (225g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 3-4 tbsp Baileys Irish Cream (or milk for a non-alcoholic option)
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
Make the Cupcakes:
- Preheat oven to 350°F (175°C). Line a cupcake tin with paper liners.
- Heat the Guinness & Butter: In a saucepan over medium heat, bring Guinness and butter to a simmer. Remove from heat and whisk in cocoa powder until smooth. Let cool slightly.
- Mix Dry Ingredients: In a bowl, whisk together flour, sugar, baking soda, and salt.
- Mix Wet Ingredients: In another bowl, whisk eggs, sour cream, and vanilla until smooth.
- Combine Everything: Slowly mix the cooled Guinness mixture into the egg mixture. Gradually add the dry ingredients, stirring until just combined.
- Bake: Divide batter evenly among cupcake liners, filling them about ¾ full. Bake for 17-20 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely before frosting.
Make the Irish Cream Frosting:
- Beat Butter: In a large bowl, beat softened butter with an electric mixer until smooth and creamy (about 2 minutes).
- Add Sugar & Baileys: Gradually add powdered sugar, one cup at a time, while mixing. Add Baileys, vanilla extract, and salt, then beat until fluffy and smooth.
- Frost the Cupcakes: Pipe or spread the frosting onto the cooled cupcakes. Garnish with chocolate shavings or a drizzle of caramel if desired
These cupcakes have a deep chocolate flavor with a hint of Guinness, perfectly balanced by the creamy Baileys frosting. Serve them with an Irish coffee or a pint of stout for the full St. Patrick’s Day experience
