Green Velvet Cake with Cream Cheese Frosting 

This Green Velvet Cake is a fun, festive twist on classic red velvet! It's moist, slightly tangy, and topped with a rich cream cheese frosting—perfect for St. Patrick’s Day



Ingredients

For the Cake:

  • 2 ½ cups (310g) all-purpose flour
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup (240ml) buttermilk
  • 1 tbsp white vinegar
  • 1 tsp vanilla extract
  • 1 tbsp green gel food coloring (adjust for desired color)
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs

For the Cream Cheese Frosting:

  • 1 cup (226g) unsalted butter, softened
  • 16 oz (450g) cream cheese, softened
  • 4 cups (480g) powdered sugar
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions

Step 1: Preheat & Prep

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or line with parchment paper).

Step 2: Make the Batter

  1. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  2. In another bowl, mix buttermilk, vinegar, vanilla extract, and green food coloring until combined.
  3. In a large mixing bowl, beat butter and sugar until light and fluffy (about 3 minutes).
  4. Add eggs one at a time, beating well after each addition.
  5. Alternately mix in the dry ingredients and the buttermilk mixture, beginning and ending with dry ingredients. Mix until just combined (do not overmix).

Step 3: Bake the Cake

  1. Divide the batter evenly between the prepared cake pans.
  2. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  3. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 4: Make the Cream Cheese Frosting

  1. In a large bowl, beat butter and cream cheese until smooth.
  2. Gradually add powdered sugar, mixing until fluffy.
  3. Add vanilla extract and a pinch of salt, then beat until creamy.

Step 5: Assemble & Decorate

  1. Place one cake layer on a plate and spread a generous amount of frosting on top.
  2. Add the second cake layer and frost the top and sides evenly.
  3. Decorate with green sprinkles, gold dust, or a white chocolate drizzle for extra flair

Store leftovers in the fridge for up to 4 days.
