 Corned Beef and Cabbage Tacos

A fun twist on the traditional corned beef and cabbage, perfect for a festive meal.




Ingredients:


  • 1 lb cooked corned beef, shredded

  • 1 small cabbage, thinly sliced

  • 1 onion, sliced

  • 2 tbsp butter

  • 8 small tortillas

  • 1 cup Irish cheddar cheese, shredded

  • 1/4 cup sour cream or mustard for serving


Instructions:


  1. Sauté cabbage and onion in butter until tender and slightly caramelized.

  2. Warm tortillas and fill with shredded corned beef and cabbage mixture.

  3. Top with Irish cheddar cheese and a dollop of sour cream or mustard.

  4. Serve with a side of pickled vegetables for extra flavor.
