Baileys Chocolate Mousse

Baileys Chocolate Mousse Recipe


Ingredients:

  • 6 oz (170g) dark chocolate (70% cocoa), chopped
  • 2 tbsp unsalted butter
  • 2 egg yolks
  • 3 tbsp granulated sugar
  • ½ cup (120ml) Baileys Irish Cream
  • 1 cup (240ml) heavy whipping cream, chilled
  • ½ tsp vanilla extract
  • A pinch of salt
  • Whipped cream and chocolate shavings (for garnish)

Instructions:

  1. Melt the Chocolate

    • In a heatproof bowl, melt the dark chocolate and butter over a double boiler or in the microwave (in 20-second bursts, stirring in between). Let it cool slightly.
  2. Prepare the Baileys Mixture

    • In a separate bowl, whisk egg yolks and sugar until pale and slightly thickened.
    • Heat Baileys Irish Cream in a small saucepan over low heat until warm (but not boiling).
    • Slowly pour the warm Baileys into the egg mixture while whisking constantly to prevent scrambling.
  3. Combine the Mixtures

    • Add the Baileys mixture to the melted chocolate, stirring gently until smooth. Let cool to room temperature.
  4. Whip the Cream

    • In a separate bowl, whip the heavy cream, vanilla extract, and salt until soft peaks form.
  5. Fold Everything Together

    • Gently fold the whipped cream into the chocolate mixture in batches until fully combined and smooth.
  6. Chill & Serve

    • Spoon the mousse into serving glasses and refrigerate for at least 2 hours (or overnight) until set.
    • Garnish with whipped cream and chocolate shavings before serving
