Baileys Chocolate Mousse Recipe
Ingredients:
- 6 oz (170g) dark chocolate (70% cocoa), chopped
- 2 tbsp unsalted butter
- 2 egg yolks
- 3 tbsp granulated sugar
- ½ cup (120ml) Baileys Irish Cream
- 1 cup (240ml) heavy whipping cream, chilled
- ½ tsp vanilla extract
- A pinch of salt
- Whipped cream and chocolate shavings (for garnish)
Instructions:

Melt the Chocolate
- In a heatproof bowl, melt the dark chocolate and butter over a double boiler or in the microwave (in 20-second bursts, stirring in between). Let it cool slightly.

Prepare the Baileys Mixture
- In a separate bowl, whisk egg yolks and sugar until pale and slightly thickened.
- Heat Baileys Irish Cream in a small saucepan over low heat until warm (but not boiling).
- Slowly pour the warm Baileys into the egg mixture while whisking constantly to prevent scrambling.

Combine the Mixtures
- Add the Baileys mixture to the melted chocolate, stirring gently until smooth. Let cool to room temperature.

Whip the Cream
- In a separate bowl, whip the heavy cream, vanilla extract, and salt until soft peaks form.

Fold Everything Together
- Gently fold the whipped cream into the chocolate mixture in batches until fully combined and smooth.

Chill & Serve
- Spoon the mousse into serving glasses and refrigerate for at least 2 hours (or overnight) until set.
- Garnish with whipped cream and chocolate shavings before serving
