Mexican-Inspired Chicken Tortilla Soup

Rainbow Jello Cups

Rainbow Jello Cups

Ingredients:

  • 4-5 boxes of Jello (in different colors: green, yellow, orange, red, blue, etc.)

  • 2 cups boiling water (per Jello box)

  • 1 cup cold water (per Jello box)

  • Whipped cream (optional, for topping)

  • Gold sprinkles or edible glitter (optional, for decoration)

Instructions:

  1. Prepare the Jello Layers:

    • Start with the first color of Jello (e.g., red). In a mixing bowl, combine 1 box of Jello with 1 cup of boiling water. Stir until completely dissolved.

    • Add 1/2 cup of cold water to the mixture and stir.

    • Pour the Jello into clear cups or glasses, filling each about 1/6th of the way (or less, depending on how many layers you want).

    • Place the cups in the refrigerator and let the Jello set for about 30-45 minutes, or until firm.

  2. Add the Next Layer:

    • Repeat the process with the next color (e.g., orange). Dissolve the Jello in boiling water, add cold water, and let it cool slightly.

    • Gently pour the second layer over the first set layer in the cups.

    • Return to the fridge and let it set for another 30-45 minutes.

  3. Continue Layering:

    • Repeat the process with the remaining colors (yellow, green, blue, etc.), allowing each layer to set before adding the next.

    • Tip: To prevent the layers from mixing, make sure each layer is completely set before adding the next.

  4. Final Touches:

    • Once all the layers are set, top with whipped cream and sprinkle with gold sprinkles or edible glitter for a festive touch.

  5. Serve:

    • Serve chilled and enjoy the vibrant rainbow layers!

Tips:

  • Use clear cups or glasses to showcase the rainbow layers.

  • For a quicker version, you can reduce the number of layers or use fewer colors.
