Pistachio Pudding Parfaits
Ingredients:
- 1 cup pistachio pudding mix
- 4 cups milk
- 1 teaspoon vanilla extract
- 2 cups whipped cream
- 1 cup crushed pistachios
- 10 small cups or glasses for serving

Instructions:
- In a mixing bowl, combine the pistachio pudding mix and milk. Whisk until smooth and thickened, about 2-3 minutes.
- Add the vanilla extract to the pudding mixture and stir well.
- In a separate bowl, fold in the whipped cream gently into the pudding mixture until well combined.
- In each serving cup, layer a spoonful of the pistachio pudding mixture, followed by a layer of crushed pistachios.
- Repeat the layers until the cups are filled, finishing with a layer of whipped cream on top.
- Garnish with additional crushed pistachios if desired.
- Chill in the refrigerator for at least 10 minutes before serving.
