Irish-Inspired Corned Beef Fried Rice

A festive twist on classic fried rice using corned beef and cabbage, inspired by traditional Irish flavors


Ingredients:

✅ 2 cups cooked rice (preferably day-old)
✅ 1 cup corned beef, chopped into small pieces
✅ 1 cup cabbage, shredded
✅ ½ cup carrots, diced
✅ ½ cup green onions, chopped
✅ 2 cloves garlic, minced
✅ 2 tbsp butter
✅ 2 tbsp soy sauce
✅ 1 tsp Worcestershire sauce
✅ 1 tsp Dijon mustard (optional, for extra tang)
✅ 2 eggs, lightly beaten
✅ Salt & black pepper, to taste


Instructions:

1️⃣ Prepare the Rice: If using freshly cooked rice, spread it out on a tray to cool and dry slightly. Cold rice works best for fried rice.

2️⃣ Sauté Vegetables: Heat 1 tbsp of butter in a large pan or wok over medium-high heat. Add garlic, carrots, and cabbage. Stir-fry for 2-3 minutes until softened.

3️⃣ Add Corned Beef: Stir in the chopped corned beef and cook for another 2 minutes until slightly crispy.

4️⃣ Scramble the Eggs: Push everything to one side of the pan. Add a bit more butter if needed, then pour in the beaten eggs. Scramble until just set, then mix with the rest of the ingredients.

5️⃣ Add Rice & Seasonings: Toss in the cooked rice, soy sauce, Worcestershire sauce, and mustard (if using). Stir-fry for 3-4 minutes until everything is well mixed and heated through.

6️⃣ Final Touches: Stir in green onions, season with salt and black pepper, and give everything a final toss.

7️⃣ Serve Hot: Plate up and enjoy with a side of pickles or a fried egg on top
