Green Goddess Fried Rice

A vibrant, nutrient-packed fried rice loaded with green vegetables and healthy fats, perfect for a St. Patrick’s Day feast


Ingredients:

✅ 2 cups cooked rice (preferably day-old)
✅ 1 cup spinach, chopped
✅ ½ cup kale, chopped
✅ ½ cup broccoli florets, finely chopped
✅ ½ cup green peas (fresh or frozen)
✅ ½ avocado, mashed
✅ 2 green onions, sliced
✅ 2 cloves garlic, minced
✅ 1 tbsp olive oil (or butter)
✅ 1 tbsp lemon juice
✅ 1 tsp soy sauce or tamari
✅ 1 tsp sesame oil (optional, for extra flavor)
✅ Salt & black pepper, to taste
✅ 2 eggs (optional, for extra protein)


Instructions:

1️⃣ Prepare the Rice: If using freshly cooked rice, spread it out on a tray to cool and dry slightly. Cold rice works best for fried rice.

2️⃣ Sauté the Vegetables: Heat olive oil in a large pan or wok over medium-high heat. Add garlic, broccoli, kale, and green peas. Stir-fry for about 3 minutes until softened.

3️⃣ Add Spinach & Avocado: Stir in chopped spinach and mashed avocado, mixing well until combined.

4️⃣ Scramble the Eggs (Optional): Push everything to one side of the pan. Add a little more oil if needed, then pour in the beaten eggs. Scramble until just set, then mix with the rest of the ingredients.

5️⃣ Add Rice & Seasonings: Toss in the cooked rice, soy sauce, lemon juice, and sesame oil (if using). Stir-fry for 3-4 minutes until everything is well mixed and heated through.

6️⃣ Final Touches: Stir in green onions, season with salt and black pepper, and give everything a final toss.

7️⃣ Serve Hot: Garnish with extra green onions or sesame seeds and enjoy!
